Today on Tasty Tuesday, Justin is doing a special COOKwithJUSTIN video! He’s making Creamy Mushroom Enchilada Casserole that we learned from Justin’s mother, Sharon.
Ingredients:
2 packages mushrooms
1 tbsp butter
1 tbsp flour
1 tbsp olive oil
4 oz can diced green chiles
1 bunch green onions
4 oz cream cheese
1/2 cup yogurt
1.5 cups jack cheese
12 oz enchilada sauce
1/2 cup salsa
6 corn tortillas
Cover and Bake 30 mins at 350F. Then uncover and bake 10 more minutes. Enjoy!
