DOUBLE CHOCOLATE CHIP MUFFINS!

Today on Cook with April I’m sharing how to make these amazingly delicious, moist Double Chocolate Chip Muffins. If you like the Costco Chocolate Chip muffins, these are 10 times better (according to Justin) hehe! Enjoy 😀

Ingredients:
1 cup flour
1/2 cup brown sugar
1/2 cup white sugar
1 cup chocolate chips
1/2 cup melted butter
1 egg
1/2 cup apple sauce
1/2 cup unsweetened cocoa powder
1/2 tsp baking soda
1 tsp vanilla

Bake at 350F for 22-26 mins

Today on Cook with April I’m sharing how to make these deliciously moist Angel Food Cupcakes! If you’ve ever had traditional Angel Food Cake in an Angel Food pan, this is a great alternative presentation option! Also, the chocolate frosting on these cupcakes is incredible! Enjoy 😀

Ingredients:
1.25 cups egg whites (apprx 10)
1 cup cake flour
1.5 cups white sugar
1 tsp vanilla
1.25 tsp cream of tartar
1/4 tsp salt

Bake at 350F 28-30 minutes.

Frosting:
2 cups powdered sugar
6 tbsp cocoa powder
5 tbsp evaporated milk
1 tsp vanilla extract
1/2 cup butter

Sliced strawberries for garnish (optional)

Japanese Hot Pot Sukiyaki!

Today on Cook with April my mother-in-law Susan shares her recipe for how to make Sukiyaki.  Sukiyaki is a Japanese hot pot style dish similar to Shabu Shabu where the vegetables and meat are cooked at the table in a soy sauce, sugar and mirin broth.  Enjoy 😀

Ingredients:
Napa cabbage
Shitake mushrooms
Lotus root
Bamboo shoots
Green onions
Enoki mushrooms
Konnyaku
Fish cakes
Shirataki noodles
Tofu
Sukiyaki beef
Shrimp
Foo

Rice (optional)

Simmer sauce:
1 cup soy sauce
4 tbsp sugar
2 cups water
1/2 cup mirin

1/2 cup extra sugar to taste
More water to taste
