CAPPUCCINO POPSICLES!

Today on Cook with April I’m sharing how to make Cappuccino Popsicles!  If you’ve never had coffee popsicles before, they’re a delicious summer frozen treat to enjoy instead of a coffee drink!  You can also make Mocha popsicles, latte popsicles, or frappuccino popsicles using this same method with different ingredients. Ingredients:

1/3 cup white sugar
2 tbsp white sugar
1-2 drops vanilla extract
1 cup heavy cream

APPLE CRISP!

Today on Cook with April I’m sharing how to make an Apple Crisp.  If you’ve ever had a berry crisp or other fruit crisp, this is a great dessert to bring to a summer barbecue.  It’s similar to apple cobbler and apple crumble but apple crisps are my favorite! Enjoy 😀

Ingredients:
6-8 peeled & sliced green apples
1 tsp cinnamon
1/4 tsp baking powder
1/4 tsp baking soda
3/4 cup brown sugar
1/2 cup white sugar
1 cup flour
1 cup quick oats
1/2 cup water
1/2 cup melted butter
Vanilla ice cream (optional)

Bake at 350F for 40-45 minutes.

SWEET STICKY RICE WITH MANGO! (Khao Niao Mamuang)

Today on Cook with April I’m sharing how to make Sweet Sticky Rice with Mango! This is one of my all-time favorite Thai desserts because the coconut milk sauce over fresh ripe mangoes is so delicious. Enjoy 😀

Ingredients:
6 ripe mangoes
1/2 cup white sugar
1 tsp salt
3 cups sweet sticky rice
1.5 cups coconut milk
1 cheesecloth (optional if you use a rice cooker)
1-2 tbsp sweet rice flour (optional as a thickener)

AVOCADO TOAST WITH BACON & FRIED EGG!

Today on Cook with April, Justin is sharing how to make Avocado Toast with Bacon and a Fried Egg. Adding avocado/guacamole spread to a traditional BLT-type sandwich makes it super delicious! This is a perfect breakfast or brunch to cook for Father’s Day! Enjoy 😀

Ingredients:
2 slices Sourdough bread
2 ripe avocados
1 tomato
1 lemon
1 tsp red pepper flakes
2 eggs
12 oz package uncured bacon

Bake bacon at 400F for 20-30 mins
